I thought I would write a blog post about what I eat on an average day. I get asked this a lot! My days vary depending on when and how much I’m training, plus how I feel. I always listen to my body and see what it wants. Some days I need less food, some days more.
This is what I ate one day last week -
I trained early this day. I started training at about 6.30am so decided not to have anything except 2 large glasses of water as soon as I got up.
I got home at about 8.30am ish and made my breakfast which I had at about 9am. I’ve started having breakfast later because of all the research done on intermittent fasting and how it improves insulin sensitivity and longevity. I try and aim for at least 14 hours between my evening meal and breakfast.
Breakfast was a green smoothie and a bowl of chocolaty protein porridge. I always have some form of fruits and vegetables at breakfast as it’s so important to try and get at least 7 portions a day (I aim for 10-12!).
Lunch was 1 tetra pak of black beans cooked with 1 red onion, garlic, tomatoes and some spices which I served on rocket, lettuce and 1/2 avocado. I also had a juice which I drank before I ate this meal.
Dinner was a stir fry of grass fed beef, prawns, red onion, carrots, ginger, chilli, garlic, kale, broccoli, cashew nuts, tamari and turmeric, served on brown basmati rice.
I also made some of my raw brownie earlier on in the day using raisins instead of dates (dates are much better!) which I enjoyed with a green tea :-)
