Serves 2

 

  • 2 courgettes
  • 120g cashew nuts
  • 2 tbsp nutritional yeast
  • 120ml water (hot or cold)
  • 1/2 red or orange pepper
  • juice of 1 lemon
  • 1 tbsp tahini
  • 1/2 red onion
  • 1 garlic clove
  • 1 tsp black pepper
  • pinch himalayan salt

 

  1. Spiralize the courgettes and cut them to make the ‘spaghetti’ shorter.
  2. Place all the other ingredients in a blender and blend till smooth.
  3. Pour into a bowl with the courgetti and mix.
